Papain

Papain is a product extracted by bioengineering technique from the unripe papaya (pawpaw). It's natural and safe. The term papain is applied both to the Crude enzyme preparation from papaya latex and one of the distinet protease fractions.

Optimum conditions for use:

PH rang: Can be used within 3~9The optimum PH is 5~7 according to the different substrate used.

Temperature rang: Can be used within 10~80 degrees The optimum temperature is 55~60 degrees according to the different substrate used .

Characteristics:The optimum PH for the enzyme complex is in the range of 5.0~7.0. The optimum temperature for the enzyme complex is in the range of 55~65 degrees

Definition of enzyme activity:One unit of enzyme activity is the amount of papain, which releases equiv of 1¦Ìg tyrosine from specified casein substrate per minute in GEPF's analytical method PT01,which is available on request.
